Ingredients
  • Filling:
  • 1 cup coconut oil
  • 1/4 cup Swerve sweetener or Monk fruit sweetener
  • 1 teaspoon orange extract or 4-5 drops wild orange essential oil (get yours here: http://mydoterra.com/veronikasoares)
  • Chocolate topping:
  • 1/3 cup coconut oil
  • 3 Tablespoons raw cacao powder
  • 1/4 cup Swerve sweetener or Monk fruit sweetener
  • 1 teaspoon orange extract or 4-5 drops wild orange essential oil
  • 1/4 teaspoon Himalayan or Celtic salt
Directions
  • Step 1 Line mini muffin pan with with mini muffin liners.
  • Step 2 Filling: in a medium bowl, mix together the ingredients for the filling (coconut oil does not need to be melted, but if it is it’s ok).
  • Step 3 Divide the filling into 24 equal portions and put it into the muffin cups, should be about 2/3 full. Place in the freezer for about 10 minutes.
  • Step 4 Meanwhile make chocolate topping: in a medium size pan melt coconut oil, add the remainder of the ingredients and mix well. Allow to cool slightly.
  • Step 5 Pour about 2 teaspoons of chocolate topping onto the filling that was previously frozen. Put in the freezer for another10-15 minutes.
