Are you following a low carb/keto lifestyle or simply avoiding processed sugar? Are you missing the refreshing taste of summer iced cappuccino? Say no more, I present to you my keto version of iced capp- full of flavour and nutritional goodness! Avoiding dairy? No worries- I got you! Try my dairy free version and enjoy your summer

  • 3/4 C unsweetened cashew or almond milk (you can also use coconut milk if you like)
  • 1/4 C of heavy cream (18-35%) **if doing this dairy free, I suggest using 2 T of MCT powder + 2 T of coconut cream
  • 1 T cacao powder
  • 1-2 T powdered Swerve/Stevia/Monk fruit(or sweetener of your choice)
  • 8-10 coffee ice cubes (brew the coffee to your taste and freeze it) ***if using freshly brewed coffee: use 1 Cup of coffee and 2 cups of ice cubes
  • half of vanilla bean OR 1/2 t vanilla extract
  • 1-2 Scoops of grass-fed collagen (why not supercharge it)
  • 1/4 t xanthum gum
  • Step 1 Place all ingredients into a high speed blender such as Vitamix and blend until ice is crushed to your desired consistency.
  • Step 2 Pour into a glass and enjoy as it is or top it with whipped cream/coconut whipped cream and sugar free chocolate chips (optional)
