Ingredients
  • 1 onion, quartered
  • 4-5 cloves of garlic, finely chopped (or grated)
  • 5-6 stalks of celery, finely chopped
  • 2 carrots, finely chopped
  • 2-3 thumb size ginger pieces, grated (as much as you like, start with less you can always add more later on)
  • 2 t ginger powder
  • 2 t garlic powder
  • salt to taste
  • 1-2 sweet potatoes, chopped
  • 1 medium size butternut squash, peeled, seeded, diced
  • cayenne pepper to taste
Directions
  • Step 1 Heat the oven to 400 F
  • Step 2 in a baking dish place a bit of water about 1/4 Cup, add diced butternut squash, quartered onion, diced carrot and chopped sweet potato. Allow to bake for about 40 minutes, stirring occasionally. 
  • Step 3 In a medium size pot, put 2-3 Tablespoons of water, once it’s hot add celery, ginger, garlic, and spices and stir occasionally until celery is cooked through. Add more water as needed. 
  • Step 4 add baked vegetables to the pot, cover with water and allow to cook for about 25 minutes
  • Step 5 season to taste with salt and cayenne
  • Step 6 enjoy
